CMC (otherwise known as Tylose) is a super fine powder that is used give extra strength to fondant (Viscosity rating 1500-2500 COS – fine molecular particles).

Ideal for modelling purposes it won’t make your fondant grainy. Add a small amount of powder to fondant until it feels pliable, like modelling clay. Your fondant will now have more resistance and dry faster. Not recommended for finer work such as sugar flowers as it cracks easily.

We recommend starting with 1 teaspoon of CMC powder into 250g of fondant. You may need to use more or less CMC powder depending on the humidity.
