After a long wait, we are so very excited to welcome world renowned pastry chef and cake artist Chef Benny Rivera back into our classroom for a limited series of workshops.

Creating 3D sculpted mini schnauzer using cake and modeling chocolate is not easy, and the main reason is, his fur.  Their bushy beard and eyebrows give Minis a charming, human-like expression but the reality is, it is extremely hard to create this particular effect. These can be created in their typical three color patterns: salt and pepper, black and silver, and solid black.

In this workshop, students will be creating realistic and life size dog sculptures giving students the opportunity to learn: PLEASE NOTE THIS DESIGN IS MADE FROM CAKE

• Building a structure support system using different materials including threaded rods, wire, flat washers, hex nuts, wood and Styrofoam.
• Stacking, filling and covering cakes properly for sculpted cakes.
• Working with chocolate ganache on sculpted pieces.
• Working with dog features.
• Working with Modeling Chocolate & Fondant
• Working with Textures
• Developing fur techniques
• Coloring Techniques

This amazing workshop runs for 2 days, approximately 8 hours each day. They have been designed using cake to give students the opportunity to work with real mediums of cake decorating. 

In order to participate in the workshop, students should have basic knowledge of covering cakes with fondant.
