After a long wait, we are so very excited to welcome world renowned pastry chef and cake artist Chef Benny Rivera back into our classroom for a limited series of workshops.

Chameleons are a distinctive and highly specialized class of old world lizard. The members of this family are best known for their distinct range of colors, being capable of shifting to different hues and degrees of brightness. The large number of species in the family exhibit considerable variability in their capacity to change color. For some, it is more of a shift of brightness (shades of brown); for others, a plethora of color-combinations (reds, yellows, greens, blues) can be seen.

In this workshop, students will be creating realistic sculpted cakes giving students the opportunity to learn: PLEASE NOTE THIS DESIGN IS MADE FROM CAKE

  • How to design and create a structure support system for defying gravity cake designs.
  • How to select the properly select the tools and materials for structure support systems.
  • How to plan distribution of cake weight correctly on structure support system.
  • How to stack, fill, and cover cakes properly for sculpted cakes.
  • How to manage chocolate ganache on sculpted cakes.
  • How to sculpt animals using both, additive (modeling) process and subtractive carving) process.
  • How to work with fondant and modeling chocolate.
  • How to create chameleon details such as nose, mouth, and eyes.
  • How to create texture techniques for chameleon skin.
  • How to create edible moss.
  • How to create tree textures.
  • How to create leaves.
  • How to create rain drops using isomalt.
  • How to select the correct colors for your designs.
  • How to properly use and apply different painting techniques based on the actual design

    This amazing workshop runs for 2 days, approximately 8 hours each day. They have been designed using cake to give students the opportunity to work with real mediums of cake decorating. 

    In order to participate in the workshop, students should have basic knowledge of covering cakes with fondant.
